Lemon Rice


Ingredients:
1. Rice - 2 cups
2. Onion - 1 (chopped into cubes)
3. Green chillis - 4 nos.
4. Mustard seeds - 1/2 tsp
5. Jeera - 1/4 tsp
6. Hing - a pinch
7. Peanuts - a handful
8. Cashewnuts - 7 to 8
9. Turmeric Pd. - 1/4 tsp
10. Juice extracted from 1 lemon
11. Curry leaves - 1 sprig
12. Chana dal - 1 tsp
13. Oil - 3 to 4 tbsp
14. Salt - as per taste
15. Coriander leaves - a handful for garnish
Method:
1. Cook rice and keep aside to cool.

2. Heat oil. Fry the peanuts and cashews. Keep aside.

3. In the same oil add mustard. When it splutters add chana dal, jeera, chopped onion, green chillis, curry leaves, turmeric pd., salt and hing. Saute till the onion turns a little soft. Add the fried peanuts and cashews.

4. Pour the above mixture into the rice. Add lemon juice and coriander leaves and mix well. Adjust salt.

5. Enjoy this dish with papad and pickle.

That lemon rice looks so delicious. Very tempting fro me to make it soon. I love lemon rice. What is that other dish in the pic, It looks like Stuffed brinjal or Thick Chicken curry. Hope I'm not embrassingyou with my guess if you are vegan.
